The provenance

Most olive oil is a blend of many countries. This one has an address.

Bove comes from one family-owned farm in the hills of Lucca. The olives are picked by hand, milled the same day, and the oil goes straight into dark glass — no blending, no long storage, nothing added on the way to your kitchen.

Single-estate oil like this normally only leaves Italy through specialty shops or direct from the producer. We're the direct route.

How to use a good oil

It has a moderate-to-high smoke point and high oxidative stability, so it holds up to heat far better than most seed oils. Cook with it — then finish with it raw.

Raw & finishing

Over burrata, warm bread, tomatoes, or a bowl of dal. This is where the peppery finish shows up.

Salads & dressing

Three parts oil, one part lemon, salt. Reviewers keep saying this is where the difference lands hardest.

You have to use this in your salads to know what you have been missing so far. Every other olive oil that is readily available here is good...but when you taste the Bove Olive Oil you realise the difference between good and GREAT! the taste is amazing and you really feel the difference in the dish when using this olive oil vs others. I had made pesto pasta using Bove and I have never eaten fresher pesto till now. Highly recommend it!

Before you buy

Why is it more expensive than the bottle at my grocer?

Single-estate oil is a fraction of one farm's yield, hand-picked and milled the same day. You're paying for a specific harvest from a specific hillside — not a blend assembled from whatever was cheapest that season.

Can I cook with it, or is it only for finishing?

Both. EVOO has a moderate-to-high smoke point and high oxidative stability thanks to its antioxidants, so it retains nutrients better than most seed oils during cooking. Use it for sautéing and roasting, and keep some back for raw.

Is the peppery bite normal?

It's the point. A gentle peppery finish is the hallmark of high polyphenol content in quality EVOO. Expect predominant sweetness first, with spiciness underneath.

How do I store it, and how long does it keep?

Cool, dark cupboard, cap on. The dark glass shields it from light. Best within 24 months of the harvest date printed on the bottle — and best used freely, not saved for special occasions.
